The best pork I ever tasted
Sadly we had to retire our old sow Pia, she ended her days in the garden she lived here whole life.
With the deepest respect for life nothing is waisted, after dry age for a week we started preparing the meat today. On the Swedish Christmas table the pork have the center stage. Since the Vikings the pig have had a almost magical place in Swedish cuisine, and it’s unthinkable not to have ham, ribs, bacon and sausages. Going back to basics doing everything from scratch makes the Christmas dinner be something more then just food, it’s a connection to the generation before us and a tradition to pass on to the kids.
