
Green walnuts
Not really a green walnut more that they are not ripe yet, al walnuts start like this with a green protective skin on the outside when the nut inside develops.
This is a Japanese walnut Juglans ailantifolia or most of its genealogy is, it’s from seeds I collected at my old university 2003, they have a big collection of several different walnut spices and they can crossbreed fairly easily.
Luckily the are all edible and I’m itching to try some recipes for green walnuts more then the classic Nocino, I want too try making jam and cook the whole nuts skin and all do you have any great recipes for green walnuts please share 🙏
