An unusual but very exciting plant that I got from a friend the first time I grew it, it is sensitive to cold so I grew it in our greenhouse where it grew almost 2 meters high and has large fluffy leaves.

It looks like an exotic plant and you go and wait for it to bloom with fantastic flowers but nothing comes, instead it is underground that things happen.

You can compare it a bit with artichoke but the roots are closer together at the stem and are larger and smoother, we were lucky to get a white and a red variety this time and will see if there is any difference between them.

The roots have a sweet taste and you can eat them raw as they are very crunchy, you have to be careful when you harvest them because you easily break the roots if you pull up and dig up the plant.

It is now planted in the spring either in a greenhouse or outdoors and then grows until the fetus arrives, when you have to bring it inside because the plant or the roots cannot cope with freezing temperatures. It is best stored in soil or water because it dries out easily if the roots are completely exposed.

Definitely a plant I would recommend growing if you find cuttings or get a plant.
