We have all seen survival programs about people in the wild finding insects larvae and eating them, the roots of this plant look exactly like this insects but with out the wiggles when you eat them. Often going under the name Chinese artichoke Stachys affinis is it scientific name, you can eat the whole plant but it’s not really any reason to eat anything more then the roots, leaves are a bit furry and not really that tasty. It’s not a productive plant like it’s bigger name sake the artichoke but still a nice addition to your garden. You don’t need to harvest it in the fall it does quite well outside during the winter season. But if you have a problems with or vole like we do you better dig them up in the fall too insure you have any left in the spring time. It’s not a invasive species and if you don’t give it a bit of TLC it soon disappear.
