Sourdough

Full grain breed day 1 the start
Mix of spelt wheat and rye that will be the sourdough starter.
Takes a few days but the sourdough together with more flour, salt and water is all that is needed for the most amazing breed where the natural flavors from the different grains are allowed to take center stage. Now for Christmas a bit of pomerans (dry orange peals) breed made like this keep for a really long time. If you us a traditional Swedish wood fired baking oven that gives the breed a hard crust and after a few days bury the loaf in grain and the balance in humidity prevents the breed from molding and drying out to much, before eating it get a steam to re-moisture it.
